This is something that really surprises me. I don't think Singapore food is bland (จืด ๆ), but rather does not taste quite right. Try Laksa which is along the same line as Khao Soi and Kaew Tew Kang in Thailand. I had a hard time finding foods with the right taste over there.

, It's kinda not quite balance in composition

food in Thailand no matter it's Chinese, Thai, Western, etc. If it's sour, it just sticks out

a sore thumb with nothing to balance the sour taste out. In Thailand, you could 'round' it out with a pinch of sugar or even fish sauce, etc. It's difficult to explain but you understand when you have it.

I think Thai food these days are too sweet so that it 'covers' the real taste of the food.

I haven't been to Singapore for a while but I though Lau Pa Sat is just a hawker center, ie

food center in Thailand. I thought Clark Quay is the center for satay. Pls correct me if I'm wrong. I haven't had any good satay outside Thailand. The meat tends to me big chunk which, unlike in Thailand, is rather tough most of the time.
